Tuna in a sesame crust and 2015 Classic Rose

Today the dish we are offering you is quick but very sophisticated dish: tuna steak in a sesame crust together with our 2015 Classic Rose wine, a young and fruity wine that will gently complement the delicate taste of fish. 

We propose the simple recipe of Gustosissimo.


  • 2 tuna steaks
  • 40 gm of sesame seeds
  • 50 ml of balsamic vinegar
  • 5 gm of sugar
  • cherry tomatoes (as many as you need)
  • Rocket plant to garnish
  • Garda DOP extra virgin olive oil to taste
  • Salt to taste
  • Pepper to taste


The first thing to prepare is the reduction of the balsamic vinegar by pouring it into a saucepan and putting it over a low heat; add the sugar and stir until it is completely dissolved. Reduce the vinegar for about 10 minutes and, when it has thickened, remove it from the heat. You must keep stirring until it is cooked otherwise you risk burning it and creating lumps.

Pour the sesame seeds onto a plate then place the tune fillets on them, pressing gently so that they stick to the surface; do the same on the other side so that the tuna is completely covered with seeds. 

Pour a drizzle of olive oil into a non-stick pan and put it over a high flame, cook the tune for 2 minutes on each side using a spatula to turn it then, season with salt and pepper. The success of a good steak is in the quick cooking method over a high flame: the tuna steak must, in fact, be cooked on the edges and pink in the center.

Cut the fillet into strips of no more than 1.5 cm wide and place them on a bed of rocket. Sprinkle the tuna strips with the reduction of balsamic vinegar then garnish with the cut tomatoes.
