Pike fish in gardesana sauce & Bardolino

After sushi and lobster linguine pasta, we couldn’t forget our lake fish as a perfect match to our Marchesini wines. Here is the recipe for pike fish in gardesana sauce

Pike fish is a typical tender fish from Lake Garda with an intense flavour. This traditional dish from the Garda area is perfect if you are looking for a fresh and delicate second course.

Recipe for pike fish in gardesana sauce

Ingredients for 6 persons

1 pike fish of at least 2 kg

For the broth:

  • 1 carrot
  • 1 piece of onion
  • 1 piece of celery
  • 1 garlic clove
  • 1 bay leaf
  • vinegar and salt

For the sauce:

  • 1 garlic clove
  • 6 agone fish fillets in oil or anchovy fillets
  • a handful of cappers
  • a few bay leaves
  • chopped parsley
  • 1 small glass of vinegar
  • 1 glass of extra virgin olive oil (best to use oil made with olives from Lake Garda

Procedure:

The first thing to do is to get a freshly fished pike fish. Clean it in order to eliminate the interiors and therefore cut both the tail and the head and divide the rest in three parts.

The first part of the recipe is preparing the broth. Fill a pan with water and put the head and tail of the pike fish in together with the vegetables. Add salt and bring to boil, leaving it to boil for 20 minutes. Turn of the hob and filter the broth with a strainer, then put it back on the hob to boil, adding the 3 parts of pike fish that then need to be cooked for 20 minutes.

Take the fish off the hob and then remove the skin and bones, arranging the fish pulp in a glass casserole dish and let it cool.

Start making the sauce in the meantime. Prepare to brown the garlic with some olive oil in a saucepan and then add the chopped agone or anchovies, bay leaf, cappers and the vinegar and cook it for a few minutes.

Pour the sauce onto the pike fish and put it in the fridge over night, covering the casserole dish with clingfilm. The longer you leave it the better the pike fish will taste.
