Cake with strawberries and Bardolino Sparkling Rose

This cake is perfect to celebrate anniversaries and special events. Here is our quick and easy recipe for a cake that will win over your guests. This strawberry cake is a classic, perfect for this season when it is easy to find tasty and bright red fruits and it is a dessert that everyone agrees on. 

Of course, you must enjoy it with some bubbles if it is a case of celebrating: we have selected from the winery the Aurora Sparkling Rose Brut: Bardolino rose with a fruity scent that goes perfectly with this dessert. Also, our wine has recently been awarded the silver medal at the Mondial du rose, the international competition for rose wines.

Ingredients

The base:

  • 4 eggs
  • 200 gm of sugar
  • 200 gm of butter
  • 300 gm of flour
  • 1 sachet of yeast for desserts

For the filling:

  • 2 egg yolks
  • 3 tablespoons of sugar
  • 500 gm of mascarpone
  • 2 tablespoons of marsala cream
  • 300 gm of strawberries

How to make the cake

The ideal base off a truly delicious strawberry cake is the Madeira type, similar to a sponge cake but even softer. Making it is really easy: use an electric whisk (or a planetary mixer) to mix together the softened butter and sugar, until a soft and frothy mixture is obtained. Add the sifted flour, yeast and eggs, one at a time, continue mixing it until you get a uniform mixture. Pour the mixture into a previously buttered and floured baking pan and bake at 170 degrees for about an hour, check with a toothpick to see if it is cooked. 

In the meantime you can get on with the filling. Wash and cut the strawberries into small pieces, put them in a bowl and add a little lemon juice. Whisk the eggs until they are thick yellow cream. Add the mascarpone and the marsala cream and keep stirring. Divide the mixture into two bowls and add 2/3 for the previously cut strawberries in one. Keep the juice as you will need it to wet the base and the remaining pieces of strawberries to decorate. 

Cut the cake base into two layers once it is cooked, soften with a little strawberry juice and fill it with a thick layer of cream and strawberries. Use the basic cream in order to do the final layer, adding the pieces of strawberries by hand, making your preferred decoration. 

Put it back in the fridge and leave it to rest for 2 hours before serving it to your guests.
